When Gregory and Manpreet (or Greg and Manny, as their friends call them) reached out to plan their Dromoland Castle wedding, I knew it was going to be something truly special. The couple wanted a celebration that honoured their combined Irish, Indian, and Italian roots in ways that were as fun as they were meaningful. The result was an unforgettable fusion of cultures, rich in colour, laughter, and love. Manny was keen to focus on the florals and décor, while Greg quietly plotted some incredible surprises, including a first dance by the lake surrounded by 1200 candles and fireworks – a moment none of us will ever forget!
Dromoland Castle was the ideal location for this destination wedding. It was only the second venue the couple viewed, but it ticked every box: easy access for international guests, rolling Irish landscapes, and a grand yet welcoming atmosphere. This 16th-century castle in Co. Clare was originally the seat of the descendants of one of the last High Kings of Ireland, but is now a luxury hotel that has a huge amount of versatility when it comes to the spaces available. Manny and Greg’s ceremony took place in the romantic walled garden, while the dinner reception took place beneath the vaulted ceilings of the magnificent Brian Ború Hall.
The ceremony started later in the day so the couple could enjoy a relaxed morning with their closest friends. By 4pm, the castle grounds were buzzing with excitement, as Manny entered the flower-filled marquee in her stunning off-the-shoulder lace Zuhair Murad gown and walked down the aisle to her waiting groom. After vows were exchanged, bride and groom joined their guests for canapes and cocktails, served from an Amalfi-themed bar as a nod to the location where Greg popped the question. Then we unveiled the first of Greg’s surprises, as traditional Indian Dohl drummers led the procession to the reception.
As the night went on, guests were treated to more multicultural elements, from bagpipes and traditional Irish dancers and drummers to a spirited singsong of ‘Bella Ciao’ led by the groom’s father. The table décor also referenced both Indian and Italian culture. Ribbons fluttered from chandeliers, reminiscent of Torans, while floral arrangements in red and orange included both marigolds (auspicious in Indian culture) and cherry tomatoes. The menu was also a feast of Italian classics, and the cake was a traditional Millefoglie.
One of my favourite moments was the first dance, which Greg and I had kept completely under wraps until the big moment. On the grass close to the lake, Greg led Manny into a scene straight out of a movie. They were surrounded by 1200 candles, as a talented friend sang for them and they danced their first dance together as man and wife. Just as their bridal party joined in, fireworks lit up the sky from a pontoon on the lake. It was emotional, theatrical, and deeply personal – the kind of moment that gives you goosebumps.
The morning after the wedding, guests were invited back for a laid-back Italian-inspired brunch on the castle grounds. We set up a spritz bar as a nod to their Sorrento engagement, with Aperol and citrus flowing freely. For their entrance, the couple had one last surprise up their sleeves: a moving acapella rendition of “In This Heart” (originally sung by Sinead O’Connor), performed by a young Irish doctor and singer I’d heard years ago and kept in my back pocket for the perfect moment. Later, Greg also surprised Manny with a solo performance of the Irish ballad “Grace,” and there wasn’t a dry eye in the house.It was a beautiful way to round off a weekend full of family, tradition, and heart.

Destination weddings are always a joy to plan which is why I had so much fun planning Harriet and Vinny’s wedding weekend in Portugal (which was also featured on Destination I Do). The couple explained that their love story began in a local pub when they were just 18-years-old and flourished for a decade before their engagement. They were childhood sweethearts and got to watch each other grow and support each other in their every endeavor.
Harriet and Vinny are truly a testament to lasting love, something that made planning their wedding day an incomparable experience. The couple shared with us the sweet story of their engagement in a quiet, discreet spot in Paris, where Vinny presented Harriet with a photo album of their years of love. When Harriet flipped to the last page, it read: “Will you marry me?”
When Harriet’s parents offered their private vacation home in Portugal as the wedding venue, the couple was set on their plans for a destination wedding. The location was beyond perfect for the theme they wanted- pink and red. Portugal is known for its stunning blossoming flowers of the same hues in the summer months, and so it was our team’s job to enhance that and really make their wedding pop!
With a mixture of vibrant florals and beautiful stationery designed by Julie King Designs, we began planning a red and pink wedding that would create lifelong memories.
The family’s vacation home was the perfect space to host all of our event needs and an even better space for our soon-to-be wed couple to prepare to say “I do.” Harriet looked gorgeous in a white gown from Halfpenny Boutique. Across each of the weekend’s events, she added layers and created different looks, each just as beautiful as the last. Vinny’s choice of a suit in a gentle green matched perfectly with the more vibrant florals we brought in for the reception.
Portugal provided the stunning backdrop for the ceremony and a church with breathtaking architecture. Our team brought together elegant floral runners at the entrance of the church and down the aisles for a more classic and simple ceremony look. A touch of the red and pink theme peaked in through the bridesmaid’s dresses, foreshadowing the reception to follow.
The ceremony drew to a close and the couple made their way out of the church to prepare for their next event of the day. I am honoured this incredible couple chose to include us in every piece of their wedding weekend, so we made sure to go the extra mile to ensure each new step would wow both them and their guests.
After the ceremony, our newlyweds and their guests returned to the family’s vacation home. White tents peppered with red and pink florals were absolutely vibrant in the sunlight. In creating the floral-filled space, we wanted to bring out every bit of the red and pink theme in the most elegant way possible. Every aspect of the reception would have a personal touch, down to the napkins embroidered with hot pink thread. It was such a thrill to use such a breathtaking summer vacation home as a blank canvas to create the event Harriet and Vinny had envisioned.
Once the sun set, carefully placed candles illuminated the grounds surrounding the white tents of the reception. With all the candles lit, the area could be seen from the sky glowing with a brilliant soft vibrancy. Harriet, Vinny, and their guests enjoyed festivities of cake cutting, champagne towers and music, but the night wouldn’t end there. We had one more grand event up our sleeve!
Now, for one of my favorite parts! The private discoteca tent was just a short walk from the reception space. Beyond the glowing blue neon sign and entrance, a private Jacquemus-inspired disco tent built just for Harriet and Vinny. The tent was equipped with its very own bar, lounging areas, and even a large sparkling disco ball hung right above the glittering dance floor. The rest of the night was spent enjoying the electric atmosphere where the bride and groom and their guests danced the night away.
You may think this is the end of our story, but don’t go just yet! We still have the epic day-after pool party we planned for the newlyweds!
I always love planning an Adare Manor wedding, but from the start, I knew that Jane and Mark’s would be something special and unique. The couple met through mutual friends in Limerick and have lived in several countries since, but their love story always circled back to Ireland. When Mark proposed on a beach in Barbados at sunset, he’d already had the ring for eight months, just waiting for the perfect moment. That same care and thoughtfulness was reflected in their wedding planning. Instead of a standard wedding day, they dreamed of something deeply personal: an intimate ceremony and dinner on Friday with just close family, followed by a full-scale celebration for 350 guests on the Saturday. They wanted their wedding day to be about them and their reception to be all about their guests. The weekend was filled with warm sunshine, lush florals, fabulous food, and amazing entertainment. But most importantly, it was a mindful and meaningful start to their lives together.
Adare Manor is one of Ireland’s most iconic venues, but for Jane and Mark, it was more than just a beautiful location. Mark’s uncle owns the estate, so it was the perfect place to exchange vows, and the only venue they considered. From the fairytale manor house to the Michelin-starred dining and expansive French gardens, every inch of the property is pure magic. We used several of its most unique spaces across the weekend: the Oak Room terrace for the ceremony, the wine cellar for an intimate family dinner, and the Grand Ballroom and formal gardens for Saturday’s reception. Adare is a venue that can feel equally right for 16 guests or 350, and that’s exactly what Jane and Mark loved about it.
Jane and Mark saw their wedding ceremony as the most important part of the whole event. So on the first day of this Adare Manor wedding weekend, we focused on creating a setting for the vows that was worthy of the occasion. The glass-enclosed terrace of the Oak Room, with its stone colonnade overlooking the gardens, was filled with greenery and florals. The bride said that entering the space was like walking into a fairytale. After the couple promised forever in a handfasting ceremony, the families moved on to the cellar for a candlelit dinner. This space is usually used for wine tastings and with flowers and white votive candles adorning the marble-topped table, it was really intimate and atmospheric. With such a small guest list, it was all about connection, conversation, and savouring each moment – and every delicious course!
With the formalities complete, the next day was time to party! Guests were welcomed with live music from the New Brass Kings and Dublin Gospel Choir, clouds of greenery and baby’s breath, and a selection of food and drink stations. Tables, settees and pretty umbrellas dotted the geometric parterre gardens, while guests enjoyed cocktails in the sunshine.
Inside the manor house, the ballroom had been transformed into a dream scene with crystal chandeliers, white florals, and lush greenery. The musical lineup alone would rival a concert: Carly Coonagh Quartet, The Legends, The New Atlantics, and DJ Gordo. Jane wore a strapless lace midi dress and danced the night away with her groom and guests.
What made this Adare Manor wedding weekend so special was the way Jane and Mark honoured both ends of the scale: quiet, private moments alongside a large celebration. It’s a reminder that you can do both, beautifully. For couples considering something similar, I’d advise you to approach each day as its own event with its own feeling. It’s all about layering experiences for your guests. And don’t be afraid to use all the spaces your venue offers – for example, the contrast between the candlelit cellar and the soaring ballroom made each of these moments more memorable.

Clodagh and Benjamin’s Cashel Palace wedding was a beautiful fusion of timeless elegance, heartfelt Irish traditions, and warm personal touches. Although they live in New York City, this dynamic couple chose to host their celebration in Ireland, where both families have roots and Clodagh’s side enjoys a long-standing connection to the countryside. From the start, they envisioned a wedding weekend that felt more like a country house party than a formal event – warm, gracious, and effortlessly elegant. The weekend unfolded at Cashel Palace in County Tipperary, with guests travelling from around the world. For many it was their first taste of Irish hospitality, and what a welcome they received!

Cashel Palace is a restored Palladian manor house that offers historical beauty balanced with modern, five-star hospitality. It was only the second venue the couple visited, but once they stepped foot on the grounds, they knew it was the one! Having booked out the property for the weekend, Clodagh and Benjamin treated their guests to a range of country activities, including fly-fishing, golf, kayaking, archery, and walks to the nearby Rock of Cashel. The wedding weekend began with a rehearsal dinner at the hotel’s Michelin-starred restaurant, The Bishop’s Buttery. This was followed by a welcome party with spritzes from an Aperol tuk tuk in the walled garden.
The venue also featured heavily in the stationery for the event. The invitation suite featured artwork from Cashel Palace, and the itinerary booklet featured an antique etching of the Rock of Cashel. A floret used throughout the paper goods was also recreated from the decal utilised throughout the venue’s ballroom.
In true Irish form, the day of the wedding delivered four seasons in one, with a bit of rain just before the ceremony for luck, followed by bursts of sun, dramatic clouds, and golden afternoon light. The ceremony took place in a nearby church, styled with formal arrangements of white flowers and trailing greenery. Clodagh arrived in a 1930s-style Brenchley convertible, wearing a bespoke Phillipa Lepley gown and a lace-edged chapel-length veil. Her classic chignon and pearl-and-diamond earrings completed the look.
The couple also added some special touches to the ceremony itself, including a traditional Irish ring warming. The rings were passed through the pews before the bride’s arrival so that each guest could imbue them with their well wishes. It was a heartfelt moment that made the vows feel all the more meaningful. After the ceremony, guests joined the newlyweds for a joyful procession through the town, led by a piper. Locals came out to cheer them on – one of those delightfully spontaneous moments that only happen in Ireland.
The couple portraits included a detour through nearby cow fields, where the couple posed at the magical 12th-century Hore Abbey, with the Rock of Cashel rising behind them. The dramatic setting, combined with a few good laughs and a bit of mud, resulted in some of the couple’s favourite moments of the entire weekend.
The reception décor was inspired by Irish and English gardens, a mix of formality and wild, organic beauty. The Tara Fay team transformed the ballroom space so that it evoked an orangerie with trees and lavender bushes scattered throughout and a custom stage backdrop of 18th century pastoral murals. Taking their cue from an old world dinner party, the long tables were dressed in pale blue cloths with cream floral detailing. Napkins embroidered with the couple’s custom crest were tied with duck egg blue velvet ribbons with hand-calligraphed names. The florals were lush arrangements of blooms, with moss and fruit spilling out onto the tables. Tall tapered candles cast soft tree shadows on the walls, heightening the illusion of dining in a garden. Each table number featured a vintage botanical print of a flower representing a place significant to the couple’s story, with fun facts on the back for guests to discover.
The couple’s love of good food and thoughtful hosting was woven throughout the weekend. One of the highlights was the oyster and Guinness bar during cocktail hour, as a nod to Clodagh’s family’s home in Waterford, which overlooks an oyster farm. Later in the evening, guests were treated to a wedding cake made of stacked wheels of cheese, beautifully decorated with fresh fruit and set on a moss-covered table. The dance floor opened with a classic first dance, followed by a night of music and merriment. The best kind of country house celebration!

Often, I am asked by my lovely couples how they can incorporate Irish culture and tradition into their wedding day. One of my favourite answers is the Warming of the Ring Ceremony. Recently, I was honoured to be interviewed by The Knot in regards to this centuries-old Irish wedding tradition.
What is it?
The Warming of the Ring Ceremony is a strongly symbolic tradition that includes everyone in attendance. Each ring is held (whether in the box or out of the box) by every attending friend and family member. Guests are encouraged to speak well wishes, pray, or internally focus on some loving intentions for the couple. In this way, the rings are ‘warmed’ with love before they end up on the fingers of the newlyweds.
How does it work?
There are a couple different ways I’ve seen the Warming of the Ring Ceremony preformed.
Typically, there is an officiant with a script for each different version. In the first, the officiant meets the guests as they arrive and offers them the rings. Before they take their seats, the officiant asks each attendee to ‘warm the rings’ with their intentions for the couple.
In the second version, the tradition takes place during the wedding ceremony. In this case, the officiant asks that before exchanging, the rings are passed around to each guest. Personally, I like this version the best. The physical warming of the rings carries such a beautiful sentiment.
How can you make it yours?
For your loved ones who cannot be in attendance, I always suggest adding a personal item of theirs: like jewelry, a linen or lace hanky to pass around with the rings. Personally, I think it is more intimate to pass the rings around without a box to make the ‘warming ceremony’ even more literal. As each guest physically warms the ring with their hands, they infuse even more warmth by way of loving thoughts and wishes. In the past, we’ve read poetry or scripture as the rings are passed to each attending guest, making these moments even more sentimental and sweet.

An Adare Manor wedding is always one to be savoured, whether it’s small and intimate or a grand affair. It has a unique ambience, a mix of old-world glamour and modern technology and comfort, suffused with warmth and good old-fashioned Irish hospitality, that makes it one of my personal favourite Irish destination wedding venues. It’s what is known as a Gothic revival calendar house, so named because it has 365 leaded windows, 52 chimneys, seven stone pillars, and four towers, which mark the days, weeks, and seasons of the year. The award-winning hotel also includes a championship golf course (set to host the Ryder Cup in 2027) and a Michelin-starred restaurant. In 2018, it was named Hotel of the Year at the Virtuoso Best of the Best Awards ahead of properties like the famed Grand-Hotel du Cap-Ferrat in France and the Berkeley in London.
But really, what makes Adare so unique is not only the setting, but the people. They have a motto they use, ‘Beyond Everything’, and that is really what they do. They go above and beyond for every single guest and every single wedding. For example, there’s Philip, the wedding butler and one of my favourite people at Adare. He becomes so involved with the wedding couple that when they say goodbye it’s a little like parting from a member of the family. Another example is Mary, part of the Adare Food and Beverage team. She gets to know every member of both families, what they would like to eat and drink, and where they need to be and when. It really is an extraordinary level of service, which reflects my philosophy as a wedding planner. It’s this kind of personal attention that makes guests feel truly pampered and turns an Adare Manor wedding from an event into an experience.
When I speak to couples who imagine their wedding in an an intimate and opulent setting, surrounded by rich history and literary legends, I tell them the Museum of Literature Ireland (also known as the MoLI) is the venue for them. Couples who appreciate this city’s love of literature know that MoLI is the perfect wedding setting. Just traverse through Dublin and you’ll find a myriad of bookshops, historic libraries, literary plaques and statues. Some of the world’s most famous writers called Dublin home.
A relatively new addition to the cultural scene in downtown Dublin, it is a dedicated museum that celebrates the rich literary heritage of Ireland and its literary luminaries. MoLI is a partnership between University College Dublin and the National Library of Ireland. Inside the hidden historic rooms of the MoLI, you will find yourself encompassed by Georgian lavishness and you and your guests will join the ranks of all the fascinating characters that have passed through over the centuries.
Couples who choose the Museum of Literature Ireland have access to the gardens outside, including the beautiful Iveagh Gardens, which were originally owned by the Guinness family. I’m always delighted when my clients choose Ballyfin Demesne for their destination weddings in Ireland, as it truly is a special place. And it’s so private that once you enter you really feel like you have arrived home. I’m delighted to have such a strong relationship with the wonderful team there, and to be able to recommend it to my clients knowing that they’ll love it as much as I do.
